Midori Illusion Floats

Top of the morning to you all.  Except that its late afternoon and I don’t know what greeting the Irish give you after lunch.   I do know that its Friday and after 5 o’clock and that means a cocktail is in order.  Because I am one to rest on tradition, I have chosen a green beverage with which to quench my Irish thirst and ease out of a long hard week.

As you may all know, I’m road testing the new SodaStream Power this week and following on from my Lime Green Syrup and Leprechaun Soda recipe, I’ve come up with a cocktail combination that capitalises on the green theme and bubbles.

The Midori Illusion is a favourite cocktail of mine.  There are quite a few Thermomix versions of it available too.  So mine needed to have a little bit of ath-thagradh (thats Gaelic for pizzazz!) SodaStream   bubbles make everything appealing and in this case, they turn a simple cocktail into a bubbling pot of gold at the end of a rainbow.

Midori Illusion Float

Ingredients – Serves 4

300gm Ice

250gm Fresh Pineapple

4 shots Midori

2 shots Coconut Rum

100gm Cream

1 – 2 tbsp Lime Green Syrup

Soda Water to taste

Whipped cream and Cherry for garnish

 

Method

Add ice, pineapple and alcohol to the TM bowl.

Blend on speed 10 for 30 seconds.

Add 100gm cream

Blend on speed 4 for 20 seconds.

Into a tall glass, pour 1 – 2 tablespoons of lime syrup (adjust according to how sweet you like it)

Using the back of a spoon, layer your Pineapple mixture into the glass until about 3/4 full.

Garnish with whipped cream and top up with Soda water until you see the bubbles start to rise (just like an Ice-cream Spider).

Garnish with a cherry to be sure to be sure!
