Its a wonderful thing to see a plan come together. In the lead up to St Patrick’s Day, I was looking for something green to star in a cocktail. My favourite soft drink of all time has got to be the Traditional Lime Green Soda. The one you used to get from your local corner store. It was supposed to be lime flavoured but it really was just fizzy green cordial.
Well we didn’t live too close to the corner when I was growing up, but we did have a SodaStream. A household name and a childhood memory for my family. We had one of those big bulky numbers that took 2 of us to pull out of the back of the cupboard. And glass soda bottles, in 2 sizes. The “I’ll just have a taste” bottle and the “I’m not sharing this with anyone” size. The only part of the whole experience that caused any strife was deciding who had to refill the bottles and who got to press the button.
With the push for healthier households today’s modern focus, many of the classic flavours from my childhood have gone by the way side. But I have a Thermomix and nothing is out of reach when you have the power of Vorwerk at your fingertips! Hand me my cape……..

This Lime Green SodaStream Syrup is a little bit unusual. It can be hard work figuring out flavours that don’t exist anymore and even harder decoding the chemical formulas for them. Getting back to basics always brings you close to the classics and this is pretty darn close.
Consider it my pot of gold at the end of the rainbow, fit for any lucky Leprechaun!

Lime Green Syrup and Leprechaun Soda
2 cups Castor Sugar
1 cup Water
Juice and pulp of 3 limes
Zest of 1 lime
250gm Honeydew Melon (skin and seeds removed, cut into small chunks)
1 drop of Peppermint essence
1/2 tsp green food colouring
Add melon to the TM bowl.
Mix speed 9 30 seconds.
Add sugar, water, lime juice and zest to the TM bowl.
Heat for 5 mins on 90 degrees, speed 3.
Add peppermint and food colouring to the TM bowl.
Mix for 10 seconds, speed 4.
Transfer to glass jar and allow to cool overnight in the fridge.
Once cooled, pour through muslin or cheesecloth and bottle.
Store in the fridge for up to 1 month. Makes about 500ml.
To make a Leprechaun Soda
Add about 25ml syrup to 1 glass of Soda water.
Mix gently and enjoy.
